Serves: 2
Ingredients:
2 chicken thighs, or 4 chicken tenders
1/2 cup sliced apples
3/4 cup chicken stock
2/3 cup balsamic vinegar
1 packet apple cider
garlic powder
rosemary
thyme
lemon pepper
1 cup brown rice
Steps
1) Mix the chicken broth, balsamic vinegar, and apple cider packet together.
2) Place the chicken and apples in the crockpot.
3) Sprinkle the garlic powder, rosemary, thyme, and lemon pepper on top.
4) Pour the mixture over it.
5) Cook on low for 2 hours.
6) After two hours, pull the chicken apart and stir.
7) Cook another 2 hours.
9) Pour the chicken and apples over rice and enjoy!
If you aren't feeling the rice, you can also pair this with mashed potatoes (the balsamic vinegar really makes it zing!), or a side salad (or on a salad).
Since Justin and I are the only ones in our family that eat real food (Rhys is still formula, rice cereal, and pureed baby food), I only cook for us two. But, this is an easily adjustable recipe. The apples don't even have to be cooked ebfore hand. They were for us because that is how we came up withe the recipe.

Mmm this sounds really good. I bet this would be delicious on a cold winter evening!
ReplyDeleteThis actually sounds really good! I bet the flavors really come out while simmering in the crock-pot! I love the idea of serving it with rice!
ReplyDeleteIt was great! Especially since we get home from church at 4:30 and are starving!
ReplyDeleteIt did! The chicken was almost to a tang with each bite!
ReplyDeleteI honestly liked it better with the rice than the thought of it plain or with mashed potatoes...and the idea of brown rice seemed a better fit than white rice.
I've never thought of putting cider with chicken. After looking at your recipe I can't believe I haven't put those ingredients together. Looking forward to trying it! Happy #NYNB :->
ReplyDeleteIt's definitely the interesting mix, but I love it!

ReplyDeleteThis looks SO yummy!! I love a good crockpot recipe and I love that this is basically a meal in a pot (personally, I hate trying to come up with sides...so if I can make one dish that can serve as my meal, I'm a happy girl!).
ReplyDeleteI'm the same way! I lie making a full-on meal and not have to do an entree and sides.
ReplyDeleteMy hubby loves apple and balsamic so this looks like something he would really enjoy
ReplyDeleteAwesome! I love this combo, so I bet he will too!
