Potato Scones

Justin is taking over the blog for me (this was supposed to be posted yesterday, but life happened...). Take it away, Justin!

This is a recipe that Tayler and I love that I invented by sheer accident.  It’s a lot like a Navajo taco, but just different enough.


First, you make some instant potatoes.  The key is to not add as much potato mix as you normally would.  It’s supposed to be a little runnier than normal.  


Add flour to the mix and stir until it appears dough-like. 

Take the dough and round out flattish patties and place in oil on medium heat.  Flip when the sides start to brown.




Let the scone drain once it has fried well on both sides and serve it with chili, cheese, and if you like, lettuce and onions and whatever else you feel like garnishing it with.

  1. What a fun idea! That's like a marriage of scones and potato pancakes. And congrats on the baby!!! I meant to comment on your instagram but I realized I wasn't following you and then my kids needed me or something :)

  2. Interesting...but I definitely imagine it ends up being pretty tasty! It almost sounds a little bit like the "latkes" my sisters like to make with leftover mashed potatoes!
