So, this is another one of mygenius random creations. Basically, I get an idea in my head, and then it starts to develop the more and more I open/close the fridge, leaving me with either sheer brilliance or "never do that again". Thankfully, this one leaned more towards the brilliance side.
So, this is another one of my
Ingredients needed:
2 Salmon Fillets
2 Apples (preferably the red ones)
Spinach
Romaine lettuce
Almonds
Craisens
1 Can of Mandarin Oranges
Raspberry Vinaigrette Dressing (or similar)
Apple Cider Vinegar
OPTIONAL:
Lemon pepper seasoning
Teriyaki sauce
Start by slicing the apple into thing wedges. Take a good sized pan and pour apple cider vinegar into the pan, enough to fill the bottom with a thin layer. Then, cover the bottom of it with the wedges. Place the fillets onto the apple slices. The fish should not touch the bottom of the pan. Season with lemon pepper if desired. Place on medium heat and cover.
While the fish is cooking (it'll take about 7 minutes), prepare the lettuce bed. On a plate/bowl, spread even amounts of spinach and romaine. Sprinkle craisens and almond slivers onto lettuce until desired amount. Drain mandarin oranges from can and place then on as well.
Let the fish cook until done. If I had to ballpark the time, itd be about 15 minutes. Remove fillets and place them onto bed. Top with more almond slivers and add some of the now-mushy apple wedges onto the side. Top salad with raspberry vinegrette dressing (or similar) and if you desire a somewhat saltier taste, add teriyaki sauce as well.
Finished product as shown above. Its rather tasty for a salad. Tayler kept commenting how proud of me she was for making something healthy.....
