Dinner in a Pumpkin

So, a coworker told me she and her husband tried this and loved it. It was Halloween, so Justin and I decided to experiment. We both loved pumpkin, we thought. We love mixing herbs and spices in our meat. What could go wrong? This will be delicious! Or....so we thought.


We decided to make it into a pumpkin picnic dinner date in our living room and watched a movie.



This dinner, we both made it. I scooped out the pumpkin and made the rice and mixed it all together. Justin cooked the meat.

Ingredients
2 cups of rice
1 medium pumpkin
1 lb of beef
1 can cream of chicken soup
cinnamon
nutmeg
pumpkin spice
sprinkle of brown sugar
garlic powder

Steps
1) Preheat oven to 350* and gut out pumpkin. Put the seeds in bowl (to roast later and enjoy) and put pulp in another bowl.
2) Cook rice
3) Brown rice with cinnamon, nutmeg, pumpkin spice, brown sugar, garlic powder
4) Mix rice, beef, and cream of chicken soup, and pumpkin pulp together in a large mixing bowl
5) Pour mixture in pumpkin and put in oven for 50 min or until pumpkin is tender

We thought it was a good idea, but it was kind of bland. The next night, we had leftovers and tried to make it a bit sweeter by adding more brown sugar. However, we just didn't necessarily like it. But, you might like it. Experiment with spices and sweeteners and different flavors for the beef. You may or may not want to add the pulp into it.
