On Sunday, Justin and I went to his brother's for dinner. His wife has a very nice sized garden in the backyard (I am kind of jealous of it).
When we left, she gave us a big bag of huge vine tomatoes, banana squash, and zucchini. And I mean huge!!!
So, for dinner tonight, we had zucchini pizza! This was our 1st homemade dinner in our new apartment! Kind of a special deal!
Ingredients:
- BIG zucchini
- pizza sauce
- mozzarella cheese
- oregano
- crushed red pepper
- bacon bits
Steps:
1) Slice the zucchini about 1/4 inch...you want it kind of thick so it won't collapse.
2) Spread sauce on them.
3) Sprinkle cheese on them.
4) Sprinkle oregano and pepper on them.
5) Bake in oven at 350* for about 10-15 min.
6) Sprinkle with bacon bits.
ENJOY!
I thought I put a little too much crushed red pepper on them, but Justin really enjoyed them. It's fun, easy, and its a healthy alternative to Little Caesar's!
